Many people have champagne tastes yet cava budget, and though not all sparkling wines are created equal there is an abundance of choice for those looking for something special and IT DOESNT MATTER what you choose!

Nearly all quality sparkling wines are made using either the bottle-fermented or tank method. In either case, the dissolved CO2 that makes wine fizzy is a by-product of a second alcoholic fermentation.

How to choose wedding toast fizz doesn’t need to be complicated.

The bottle-fermented method (aka the Traditional or Champagne Method) is where the still, dry base wine is bottled with sugar and yeast. The fresh yeast / sugar mix triggers the fermentation process in the bottle. This slow fermentation is followed by a period of aging with the dead yeast, (yuk!), and eventually the yeast is removed from the bottle and the bottle is topped up with a mixture of wine, which is called dosage.

How many of your guests are going to know this info. Or care? Wedding champagne, or Wedding Prosecco, they both wet the whistle!
